Dr. Anastasia Loukri, member of the AgrofoodRnD research group, participated in the 8th International ISEKI-Food Conference, which took place from 1 to 3 June 2026 at the University of Algarve in Faro, Portugal.
During the conference, Dr. Loukri delivered an oral presentation entitled “Development of chitosan edible film by using olive kernel extract prepared by deep eutectic solvent” and presented a poster entitled “Impact of encapsulated olive leaves extract on sponge cake quality.”
The presented research focused on the valorization of olive-derived by-products for applications in food products and bio-based packaging systems. Specifically, the work examined the use of olive kernel extract in chitosan edible films and the incorporation of encapsulated olive leaf extract in sponge cake, connecting agri-food by-product recovery with practical applications in food quality, functionality and sustainable packaging.
The study was conducted under the frame of the “Agro Food Waste Recovery: new processing technologies for food Safety and Packaging” — FoWRSaP project, funded by the European Union’s Horizon 2020 PRIMA Programme, Section 2.
AgrofoodRnD’s participation in the conference contributed to the dissemination of research outcomes and supported scientific exchange with the wider food science community on sustainable food systems, circular economy and innovation in food and packaging technologies.
