Anastasios Vetsos is an Agronomist with an integrated master’s degree in “Food Science and Technology” from the School of Agriculture, of Aristotle University of Thessaloniki (AUTH). He has recently completed his second master’s degree in “Food Science and Nutrition” at the Department of Food Science and Technology of AUTH, where he conducted his thesis research on consumer behavior. His research interests also include the extraction of bioactive components using green methods (e.g., ultrasound-assisted extraction) and the valorization of food industrial by-products for the development of novel food ingredients (e.g., natural colorants). He has worked on two national projects and collaborated with various companies in the R&D of innovative products and extracts. Anastasios is also experienced in several analytical techniques (e.g., GC-FID, UV-Vis, HPLC-DAD, FT-IR) for extract characterization. During his undergraduate studies, he engaged in the valorization of coffee by-products and was a member of an award-winning team in two national competitions, where an innovative eco-friendly product, adhering to circular economy principles, was developed. One of his primary aims is to commercialize research results.
